fix(canvas): pan horizontally with Shift+wheel (#523) 
- Convert primarily vertical Shift+wheel input to horizontal panning
- Preserve native horizontal trackpad deltas instead of swapping both axes
- Keep Ctrl and Meta wheel gestures on the existing zoom path
