Sipke Schoorstra a7d9ebc797 Update System.Text.Json to version 8.0.5 for all projects 
Updated the System.Text.Json package to version 8.0.5 across multiple projects to address security vulnerabilities and ensure consistency. Additionally, modified the Directory.Packages.props to reflect the new version and added necessary overrides in various csproj files.
